The Waxwing’s Whisper
1.5 oz 45th Parallel Midwest Gin
.5 oz Black Currant and Gooseberry Simple Syrup
4 oz NessAlla Elder Linden Kombucha
Fill a cocktail tin with ice, add Gin and Simple Syrup… stir gently with a bar spoon, pour into and 8 oz glass and finish with Kombucha. Garnish with a black currant and twist of lime.
Black Currant and Gooseberry Simple Syrup
1 cup water
1 cup berries
1/2 cup organic cane sugar
combine all three items in a saucepan- bring to a boil. Continue to simmer and cook until fruit explodes and liquid reduces to about half. Strain into a glass container and allow to cool. Once cooled- close container and store in refrigerator for up to 4 weeks.
